Description
In a Far away galaxy is our reinterpretation of a historical English porter from the 18th century, a dark, funky and sour beer. Brewed with the finest ingredients with the Maris Otter as a base malt, a dash of smoked malt and other specialties, flakes, hops, this beer was sour kettled with Lactobaccilus Helveticus and fermented primary with WLP013. Second fermentation with Brettanomyces Claussenii lasted three months and after that it continued the conditioning in the bottle. A complex bouquet is followed by layers of depth as the taste is changing over each sip. Roasted malts, tartness and earthy notes, funkness, dried grass, biscuits, praline, lemon, citrus, salt, mellow sweetness covered by smooth saltiness.
A beer drinking fresh or in the years to come because it will develop beautifully.
SERVING: 12 ºC – 14 ºC IN CHALICE, GOBLET OR TULIP GLASS. FOOD PAIRING: MUSSELS, FISH & CHIPS, CURRY, CURED PORK.
In a far away galaxy este interpretarea unui porter englezesc din secolul al 18-lea, o bere inchisa la culoare, funky si acra. Brasata din cele mai bune ingrediente, cu Maris Otter ca malt de baza, malt afumat si alte specialitati, fulgi, hamei, aceasta bere a fost acrita in kettle cu Lactobaccilus Helveticus si fermentata primar cu WLP013. A doua fermentatie facuta cu Brettanomyces Claussenii a durat trei luni, urmata de refermentarea in sticla.
Un buchet amplu, urmat de o complexitate aparte impresioneaza la fiecare inghititura. Note de malturi prajite, aciditate, note de iarba uscata, biscuiti, praline, acid citric contureaza o bere de exceptie.
Acesta bere poate fi pastrata o perioada indelungata, dezvoltandu-si gustul si complexitatea in timp.
